This cheese is made with pasteurized cow's milk typical of the Venetian tradition, to which pieces of black truffle are added in the mixture.
Aged for a minimum of 1 month, the wheel is then placed under beech ash and massaged with various types of spices.

The Perlagrigia with truffle under ash from La Casearia Carpenedo (which we present here in a 1.5kg half form) is a cheese that surprises with its elegance, never overpowering and with a pleasant aftertaste. Antonio Carpenedo has managed to create the right balance between truffle, spices, and milk. The truffle, surprisingly, does not overshadow the other flavors, without losing its prominence. It is a particular cheese for the table or to be paired with honey and not particularly structured red wines, such as Valpolicella, Barbera d’Alba, or Pinot Nero from Alto Adige.
The gray color of the ash prevails in the crust, giving a delicate appearance. When cut, a thin gray line, of ash indeed, a line created by the spices, is appreciated, followed by the light yellow of the paste speckled with truffle. To the touch, Perlagrigia impresses with its elegance and elasticity. The very fine and impalpable ash creates a velvety effect, very pleasant. In the mouth, the truffle predominates first, wisely dosed, allowing space for the mix of spices with which Perlagrigia is massaged, with a predominance of cinnamon. Hints of milk and butter.
Il colore grigio della cenere la fa da padrone in crosta, dando un aspetto delicato. Al taglio si apprezza una sottile linea grigia, della cenere appunto, una linea data dalle spezie e poi il giallo chiaro della pasta punteggiata di tartufo. Al tatto il Perlagrigia colpisce per la sua eleganza ed elasticità. La finissima e impalpabile cenere crea un effetto vellutato, molto piacevole. In bocca prevale in primis il tartufo, dosato con sapienza, per lasciare spazio poi al mix di spezie con cui viene massaggiato il Perlagrigia con prevalenza di cannella. Sentori di latte e burro.
