The Blu di Capra from Casara Roncolato is made with high-quality milk from Lessinia goats.
A goat cheese that, to become blue, has a culture of Penicillium Roqueforti added, which will create the typical blueing phenomenon.
The cheese is aged for about 60-90 days, during which the mass becomes creamy and pleasantly sweet and tart, with a nice aromaticity.
The Blu di Capra is spectacular to taste on a slab of yellow or taragna polenta from Valtellina or paired with various jams, mustards, and honeys. It is interesting with risottos. It pairs well with soft wines that have a sweet finish, such as a Passito or a Recioto from Valpolicella.
It is the perfect synthesis of a delicate flavor, the result of a carefully balanced combination of the characteristic taste of goat's milk and the fragrant note of blue mold, and important nutritional characteristics: high digestibility, low cholesterol content, and an excellent source of protein and calcium. With a compact texture and ivory white color, the Blu di Capra features typical gray-green marbling, resulting from the natural molds during maturation.
