This Bagoss cheese is so good! And it's beautiful to see with its shiny yellow paste! A miracle of nature? No, an ancient tradition that involves the use of saffron in the cheese paste.
Produced in the village of Bagolino, in the Brescia mountains, only with milk from alpine pastures. Semi-cooked, it is normally aged for at least 24 months. It has a typical aroma and a very compact paste. Where does the name come from? It is derived from the name given to the inhabitants of Bagolino, Bagossi.

It is an incredible table cheese to eat together with coarse and hot polenta just taken from the pot. For this great cheese, you can also pair it with classic sparkling wines, such as a nice Franciacorta, or medium-structured red wines, and if the aging is high, also Amarone or Barolo.
