Cheese made from goat's milk that is aged in typical baskets for a period ranging from 4 to 12 months.

It develops an intense and characteristic aroma of goat's milk that evolves towards dried fruit and hazelnut with aging.

The paste is initially compact and softens with aging. Sweet and slightly spicy with a nice savoriness.
