It is a Slow Food Presidio and this should already tell us a lot. It speaks of rarity, quality, research, and a return to origins. A simply emotional and rare cheese that also has the DOP recognition. Aged up to 18 months, the Monte Veronese dop is produced only with summer milk from the high mountain pastures in Lessini near Verona.
This excellent cheese presents itself as hard to cut into flakes; it is rich in aromas of honeys, dried fruits, melted butter, aromatic herbs, and ginger. Great intensity on the palate with a beautiful creaminess and a pleasant finish of toasted almonds and sweet spices.
La Casara won the 32nd edition of the Festa del Formaggio Monte Veronese, in the Monte di Malga category.

This cheese is delicious enough to be enjoyed on its own at the end of a meal with a great bold red wine. We recommend a superb Amarone della Valpolicella DOCG. However, it pairs very well with chestnut and honeydew honeys, with dessert wines and late harvests from white grapes. You can achieve pairings that evoke unforgettable emotions.
We present this delightful cheese in a small portion of about 200 grams, ideal for a tasting along with other (younger) cheeses or for a romantic dinner for two.
