This Monte Veronese dop can be defined as "old". Made with raw cow's milk and aged for 12-18 months.
The rind is thin and elastic, and the paste has a color that varies from pearl white to straw yellow, especially in the summer period.
It has a medium eye formation. It has the aroma of wildflower honey, especially in the summer, and fresh butter. Intense and savory on the palate, it has a good taste persistence with a pleasantly almondy finish.
Cheese that is very suitable for grating and for first courses such as Bolognese lasagna or vegetable pasta.
Excellent on vegetable soups and legume purees. It pairs well with structured and aged white wines, with medium-structured red wines, and one in particular, regional, with Valpolicella Ripasso. It can be used at the end of a meal with a delicate acacia honey.
We present this delicious cheese in a small portion of about 200 grams, ideal for singles, for a trial tasting, or for a couple's dinner.
