It is the medium-aged version of this cheese from the Veronese mountains, produced exclusively with raw cow's milk and semi-cooked paste.
It is aged for about 6 months. The rind is thin and elastic.
The paste has a color that varies from white to straw yellow, especially during the summer period.
More intense in aromas with a lovely sensation of yellow flowers, fresh milk, and a nice balance on the palate.

Ideal cheese for appetizers and typical starters. It is also used to fill lasagna and cannelloni.
Great for gratin vegetables and grated on pasta and risottos. It pairs well with red wines like Valpolicella and Valpolicella Superiore.
Excellent also with delicate and spicy Bardolino as well as with structured and slightly soft white wines. Try it with Durello Metodo Classico for a very typical pairing.
