The Carnaroli Rice is a variety originally from Pavia, Novara, and Vercelli, developed in 1945 thanks to the work of the rice grower from Paullo, Angelo De Vecchi, who crossed two other rice varieties: Vialone and Lencino. The name of this particular rice seems to derive from that of one of his collaborators, a certain Carnaroli.
This is, however, especially a whole grain rice that retains many more nutritional properties compared to traditional refined white rice because, being less processed, it contains a greater amount of fiber. Whole grain rice is indeed a highly digestible food, very beneficial for the intestines, and has a lower glycemic index precisely due to its high fiber content.

It is ideal for the preparation of meat based risottos as it remains particularly grainy in the style of the Mantuan tradition.
Its lower amount of starch indeed makes it difficult to achieve creamy and flowing rice. A recipe absolutely worth trying is the risotto with radicchio and pancetta.
