The Pecorino Brillo from Il Forteto is a cheese made from pure sheep's milk aged under wine for at least 4 months in terracotta jars. The paste is white, crumbly, and slightly rough while the crust, inedible, is treated with wine and then covered with a protective film.
After being carefully selected, the wheel of pecorino is washed, dried, and placed inside a terracotta jar, a typical Tuscan container usually used for storing oil and wine, where it is left soaking in a mix of Tuscan wines for over 1 month.
This treatment requires constant care involving daily checks and continues until the cheese reaches the right degree of wine absorption that significantly changes its original characteristics.
When the cheese is then taken out of the jar, the paste, while retaining the typical flavor of aged pecorino, has softened, sweetened, and acquired the delicate flavor and the unmistakable aroma of wine.
