The Toma di Capra d'alpeggio is another small masterpiece by Opere Casearie. It is a cheese made from raw goat's milk with vegetable rennet; it is produced in Valchiusella, the valley where the cheese factory is located, in Baldissero Canavese.
Its texture tends to melt in the mouth and has the characteristic sweet and delicate flavor that becomes more intense as it matures. The essential months of refining take place in the cellar of Giuseppe Bernardinelli of I Sapori del Portico, maintained at controlled temperature and humidity.
The Goat Cheese from Mountain Pasture with Vegetable Rennet (which we present here in a 500-gram portion) is perfect with a crunchy loaf of rustic bread and a good glass of dry and slightly aromatic white wine such as Sauvignon Blanc and Pinot Grigio.
It is an excellent ingredient for risottos, but it also works perfectly in a warm savory tart with caramelized onions and a floral pint of Blond Ale.
