The Nascondino Affinato in Pere by Corrado Benedetti (presented on this page in a half form of 4.5 Kg) is a cheese with a straw-yellow color and a slightly spicy flavor with fruity notes.

This cheese has its roots in history. In the past, to protect the cheese from theft, the forms were hidden under fruit or in the midst of hay. In these hiding places, the cheeses absorbed unexpected aromas and flavors. Experience has transformed this need into a technique that Corrado Benedetti has perfected. The cheese forms are cleaned and, in this version, immersed in a puree obtained from the maceration of pears, in which they are left to rest. They are then removed from the vats and placed to age. Thanks to this process, the pears give the semi-fat cheese delicacy and a pleasant character.
