The Nascondino Extra Affinato in Ciliegie by Corrado Benedetti is a cheese that is either white or light yellow with reddish infiltration in the rind. Its aroma recalls fruity hints of ripe sour cherry.
This particular maturation follows a process very similar to its larger cousin, but the result is completely different. This is thanks to the starting cheese, which in the extra version is of reduced size. The selected caciotte are aged in Corrado Benedetti's premises in Croce dello Schioppo to develop the range of flavors. The maturation process involves prolonged contact of the cheese with a puree obtained from macerated cherries. The practice of hiding cheese under fruit has ancient origins and is the reason for the name of this product. In this version, the Nascondino develops fresh and delicate flavors, in addition to its characteristic reddish coloring.
In June and July, the cheese is cleaned and aged in tanks with a mixture based on black cherries. Subsequently, it matures for up to 8 months in the company’s facilities.
Raw whole cow's milk, salt, rennet, lactic cultures. Aged in cherries.
