This cheese is made from sheep's milk. Once it has aged for at least four months, it is placed in pits dug in the rock. Here, it remains for 90 days, enclosed in natural cloth bags, during which the cheese matures undergoing fermentation. The aging in the pit gives the cheese a strong flavor and an intense aroma, rich in herbal and mineral notes.
