Cheese made from sheep's milk. Once it reaches at least four months of aging, it is placed in pits dug into the rock. Here it remains for 90 days wrapped in natural cloth bags, during which the cheese matures undergoing fermentation. The aging in the pit gives the cheese a strong taste and an intense aroma, rich in herbal and mineral notes.
