A classic salami of tradition that renews its success and authenticity in Corrado Benedetti's workshop. The processing is simple, but not trivial: the pancetta undergoes a careful degreasing before being immersed in brine and aged.
It is a typical salami of Italian culinary tradition obtained from the pig's belly which is seasoned with various spices, salt, and pepper. The meat is then rolled up on itself and left to age for about three months.
