The Speck dello Schioppo by Corrado Benedetti is a cold cut with a delicate flavor featuring toasted notes, and its aroma recalls forest scents with subtle fruity hints.
The cuts from selected pigs are expertly processed by the butchers of Corrado Benedetti. Unlike raw ham, the pig's leg is opened, salted, and flavored.
After an initial phase of cold drying, which preserves the sweet and pinkish meat, the speck is carefully smoked according to traditional preservation methods typical of northern countries. Hung in the air, it continues to mature and dry for at least 27 weeks at the Corrado Benedetti reserves, making it a sweet and aromatic cold cut.
The Speck dello Schioppo has a beautiful bright pink color, with thin and uneven fat streaks. On tasting, it is an explosion of forest scents and smoky aromas, despite the delicate flavor of the cold cut.

It works great sliced on a cutting board to be served as an appetizer or aperitif, accompanied by other cured meats and cheeses.
When cut into thin strips, it is also suitable for creating delicious first courses. Classic dishes include pasta with speck and walnuts or speck and zucchini.
For a sophisticated appetizer, roll the slice into a small rose and pair it with caramelized pepper threads.
