The Wild Garlic Sauce by I vasetti di Riccardo is truly extraordinary! Legend has it that wild garlic is the first wild herb that bears find after hibernation. It is a fragrant leaf that can only be harvested for a few weeks a year, between March and April.
Thewild garlic, processed immediately and raw, becomes a sauce that releases the full intensity of this particular wild herb with a flavor that is more delicate compared to common garlic, a taste that somewhat resembles chives.
