It is a creamy and fragrant condiment that pairs well with fresh pasta, such as trofie and orecchiette, and with stuffed pasta. Ricotta and spinach ravioli, herb ravioli, as well as radicchio or artichokes are enhanced by the sweet aroma of walnuts. It also pairs very well with delicious crostini topped with gorgonzola or radicchio. Mixed with carrots, fennel, and celery sticks, it is also perfect for a delightful winter pinzimonio.
