The Carnaroli Rice with porcini mushrooms by Tartufi Bianconi is a delicious risotto, truly very simple to prepare.
Heat 3 tablespoons of oil in a pan, add the rice and toast it. Add half a glass of white wine and let it evaporate. Add about 950ml of broth. Adjust with salt, cook for about 16/18 minutes. Once cooked, stir in a knob of butter and some Parmigiano Reggiano.
This is a very fragrant risotto with an intense flavor.
Pairing: a good Piedmontese Nebbiolo or a fresh and savory Custoza.
