The Sheep BIO IGP Terre del Volturno 2019 from the winery Il Verro is a white wine produced exclusively from the Coda di Pecora grape variety.
This white wine is produced in the hilly area of the municipality of Formicola, at the foot of the Monte Maggiore mountain range in the province of Caserta. It is a native grape variety of which there are almost no traces left, and only a few local farmers preserve small quantities.

Vineyard system: Guyot
Vineyard: predominantly clayey with significant volcanic material presence. Southeast exposure; altitude of 300 m above sea level.
Harvest: hand-picked in 20kg plastic crates
Harvest period: first - second decade of October
Winemaking: the harvested grapes are immediately taken to the nearby winery, where they undergo a crushing and destemming followed by a soft pressing. Fermentation occurs in stainless steel fermenters at controlled temperatures. This marks the beginning of aging on fine lees, in the steel tanks that lasts until May. Bottling takes place in April and before commercialization, an additional aging period in the bottle is awaited lasting 1-2 months.

The Sheep BIO IGP Terre del Volturno 2019 from the winery Il Verro is a still white wine that pairs perfectly with shellfish; it also deserves to be tried alongside battered vegetables, buffalo mozzarella from Campania, and spaghetti with mussels and clams.

Taste: good saltiness and a decent freshness, excellent persistence and flavor-aroma correspondence.
Smell: notes of fresh fruit, annurca apple, broom flowers, and mint.
