The Jancu di Carpene Etna Bianco Bio DOC 2018 by Tenuta Monte Gorna is a biological white wine that demonstrates how Etna can provide us with great wines.
Grapes: Carricante 60% and Catarratto 40%.
Vineyard: south/east slope, in the Carpene/Monte Gorna area at 760 m above sea level. Surrounded by chestnut, oak, and broom forests that provide the vineyard with an ideal microclimate for grape ripening. Volcanic, sandy soil rich in minerals and organic substances. Organized in terraces.
Training: guyot system, single spur cordon with a spacing of 2.20 x 0.85 m. Moderate temperate climate with significant temperature variations between day and night.
Cultivation method: Traditional, with a complete absence of pesticides, organic farming has been practiced for over ten years and is regularly certified.
Vinification and aging: cryomaceration for 24 hours, 48 hours of static decantation, and fermentation in stainless steel tanks for about a month at controlled temperature. Maturation in stainless steel tanks for 3 months on fine lees and aging for no less than 3/4 months in the bottle.
