The gray salt is harvested among the clay incrustations that mix with the rocks, forming real mazes where water seeps in during high tide, then stagnates and creates salt plaques on the bottom. Many are natural, while many have been constructed by the ancient Celtic peoples. When the salt slabs formed substantial deposits, the "paludieri" had the task of scraping them and extracting the gray crystals that formed. Why gray? The clay, when in contact with salt, is digested by the crystal that feeds on it, so to speak. Therefore, it is a salt particularly mineralized by the components of the clay.
