The Gorgonzola DOP dolce di Arrigoni is a blue cheese, soft, made from whole cow's milk, named after a town in Lombardy near Milan where it is said to have originated in the 12th century to recover a curd forgotten the previous day.
The sweet version is soft, with a blue veining that is evenly distributed but characterized primarily by blue-green molds.
Aging: minimum 50 days
Shelf-life: 60 days
Ingredients: Pasteurized cow's milk, salt, rennet.
