The Gorgonzola DOP Dolce di Arrigoni is a blue-veined cheese, soft, made from raw whole cow's milk, named after a town in Lombardy near Milan where it is said to have originated in the 12th century to recover curd that was forgotten the previous day.
The sweet version is soft, with a uniformly distributed blue veining but characterized by molds that are primarily blue-green in color.
