The Gorgonzola DOP dolce di Arrigoni is a blue cheese, soft, made from whole cow's milk, named after a town in Lombardy near Milan where it is said to have originated in the 12th century to recover a curd forgotten the previous day.
The sweet version is soft, with a blue veining evenly distributed but characterized by molds that are mainly blue-green in color.
