The Gorgonzola DOP piccante by Arrigoni is a blue cheese, soft, made from whole cow's milk, whose name comes from a town in Lombardy near Milan where it is said to have been created in the 12th century to recover a curd forgotten the day before.
The spicy version features more pronounced blue/green veins, a more crumbly and dry paste with a stronger flavor due to both the type of molds used and the prolonged aging.
Aging: minimum 80 days

The Arrigoni Gorgonzola DOP spicy (which we present here in a whole form of about 12kg) is a great blue cheese that pairs well with mascarpone, perhaps garnished with walnuts. You can also enjoy it with fruits, cooked and raw vegetables, jam, honey, mustard, and chocolate.
Flavor: decisive and spicy.
Crust: compact, rough, hard with a gray/pink color, not edible.
Paste: pale yellow, crumbly, characterized by an intense development of green mold.
