The Gorgonzola DOP piccante by Arrigoni is a soft, blue-veined cheese made from whole cow's milk, named after a town in Lombardy near Milan where it is said to have originated in the 12th century to use up curd that had been forgotten the day before.
The spicy version has more pronounced blue/green veins, a crumblier and drier paste with a more intense flavor due to both the types of molds used and the prolonged aging process.
