The Arrigoni Gorgonzola DOP Piccante is a blue cheese, soft, made from raw whole cow's milk, whose name comes from a town in Lombardy near Milan where it is said to have been created in the 12th century to recover a forgotten curd from the previous day.
The piccante version features more pronounced blue/green veins, a crumblier and drier paste with a more intense flavor due both to the type of molds and the extended aging.
Aging: minimum 80 days
Shelf-life: 45 days

Taste: strong and spicy.
Crust: compact, rough, hard with a gray/pink color, not edible.
Paste: straw-colored, crumbly, characterized by an intense development of blue molds.
