The Taleggio DOP by Arrigoni is a soft cheese with ancient origins, named after the valley of the same name in the upper Bergamasque area where it was born. It is a cheese belonging to the "washed rind" family, characterized by weekly brushing with water and salt which determine its characteristic coloring.

Eyes: Generally absent or presence of very small eyes.

Rind: thin and soft, pinkish in color
