In the vineyard: the use of synthetic chemical products and herbicides is banned, manual harvesting in crates
In the cellar: fermentation in steel and 20 days of maceration, with only temperature control. Use of indigenous yeasts only. Aged for 18 months in barriques.

The Montepulciano d’Abruzzo Classico DOC 2015 from the winery Il Quercetto is an excellent wine to pair with pasta dishes based on game, braised meats, and all kinds of stewed wild meats.
Sensory analysis: compared to 2011, the nose is more austere, with the mineral note still predominant, leading to chocolate, sweet tobacco, balsamic notes, and red fruits. The palate is very drinkable with a well-present tannin that is already integrated. The retro-nasal olfaction returns the aromas with equal elegance and complexity.
