Taccorosso is a pure Negroamaro obtained from the oldest vineyards of Cantina Paolo Leo, in the provinces of Taranto and Brindisi. The ancient bush-trained vines yield very low production of grand quality. The concentration of the fruit during ripening explodes in the glasses, resulting in a wine of exquisite structure and body.
To achieve such a complex wine, the harvest is done by hand in the early hours of the morning, paying great attention to the bunches. After harvesting, the grapes undergo destemming and the must is left to macerate, in contact with the skins, for 12-15 days, fermenting at a controlled temperature of 25°C. Afterwards, it is aged for 3 months in steel tanks, 10 months in tonneaux, and 3 months in the bottle.
With a ruby red color and elegant garnet hues, on the nose this Negroamaro reveals itself to be particularly complex, with aromas of berries, myrtle, and juniper. Teasing spices remind one of licorice, coffee, and Mediterranean aromatic herbs. On the palate, it offers fascinating tannins. Soft and velvety, it delivers a sensational taste and olfactory harmony.
The power of this Negroamaro is a gift to refined dishes with a succulent structure. Paired with a tender beef cheek cooked at low temperature, curious first courses like pork cheese tortelli and turnip tops, and truffle risottos are a hegemony of the senses. Roast turkey and tender cuts are an everlasting charm.
