The unfiltered Taggiasca extra virgin olive oil from the Antico Frantoio di Saguato is an oil obtained directly and exclusively from Taggiasca olives from the Dianesi valleys.
This oil is the result of a pressing carried out with olives harvested and pressed on the same day. Olives are harvested in different periods of the year, from November to late February, and pressed at the company mill.
The harvesting is done strictly by hand with pneumatic harvesters, on nets placed at the moment to collect only the olives shaken and not those that have fallen naturally over time, which would compromise the quality of the oil.
The pressing is carried out on the same day in the mill, with cold processing, always below 27°C.
