The Nibbio Bianco Basilicata IGP 2021 from Cantine Strapellum is a generous wine like Basilicata.
Grapes: Made with carefully selected pure Aglianico del Vulture grapes handpicked.
Production Area: Vineyards owned located at the foothills of Vulture. San Savino area - Rionero in Vulture.
Winemaking: The freshly hand-harvested grapes in small crates arrive at the winery and are quickly destemmed and gently pressed to extract only the noblest and most aromatic fractions from the berry. The must is immediately separated from the skins and filtered to prevent it from acquiring color. Fermentation, at controlled temperature, takes place in refrigerated steel tanks at about 14°C. This helps to preserve all the characteristic aromas of the grape varieties.
Aging: After fermentation, our wine rests in 225-liter French oak barriques for 12 months, completing its aging in fine bottles in the dark for at least 9 months.

The Nibbio Bianco Basilicata IGP 2021 from Cantine Strapellum is excellent paired with seafood salads, snails à la bourguignonne, salt cod with roasted potatoes, salmon or smoked fish, game terrines, vol au vent, ricotta and spinach ravioli, tagliolini with speck, mushroom soup, steamed cod with cream, baked saltwater fish in parchment, grilled swordfish.
Visual examination: Intense straw yellow, with golden reflections.
Olfactory: Intense floral bouquet, aromas of fresh white-fleshed fruits, very evident spicy notes such as vanilla and sweet cocoa, all enveloped in pastry scents like coconut flour and custard.
Taste: On entry, the acidic backbone of Aglianico del Vulture is felt, with its long persistence, confirming the olfactory notes and allowing time to appreciate its elegance and softness.
