The spicy Caciocavallo calabrese from Casa Folino is a semi-hard aged cheese with a characteristic elongated flask shape and rounded base and head, typical of southern Italy. Its name derives from the ancient method of drying cheeses tied in pairs over a beam, or from the fact that the paste is shaped like a "little horse".
Made from 100% pasteurized cow's milk, with the addition of rennet and salt, according to the typical Calabrian recipe.
It has a compact and semi-hard texture when cut, with a few slightly distributed eyes, a yellow/gold color with a smooth, shiny rind.
