The Extravecchio Balsamic Vinegar is aged in barrels at the company for more than 25 years. At Acetaia Al Parol, the entire production process takes place, from the grape harvest and the boiling of the must, to the aging in wooden barrels.
The limited production, 6 liters per year, makes it a truly unique product, with intoxicating aromas and a enveloping, velvety taste.
The slow aging, the fragrances of the wooden barrels, and the typicality of the grapes from the Modena area give it structure. The skill and experience of the master vinegar maker do the rest.
