The Organic Extra Virgin Olive Oil Colli del Basento BIO by La Basentana is obtained exclusively from olives harvested from the organic farms of the Lucanian company in Calciano, in Matera.
Varieties: Ogliarola, Leccino, Carolea.
Harvesting and production methods: The olives, strictly hand-picked from the trees, are transported in perforated crates to the company mill, where they are ground within 12 hours of harvesting. The olives are de-leafed and washed, then crushed under granite stones, kneaded in a controlled atmosphere at 24° C, and extracted using a cold continuous method.
The obtained oil is stored in stainless steel tanks, filtered after natural decantation for several days.
Chemical and organoleptic characteristics: The care in the various stages of harvesting and processing gives this extra virgin oil a Premium quality.
Acidity: 0.13% (oleic acid)
Peroxide value: 5.1 meq O2/kg (meq of Oxygen)

With a delicate taste, intense fruitiness with a slight hint of bitterness, just the right spiciness, and almond notes in the harmonious finish.
