The Colli del Basento BIO Extra Virgin Olive Oil from La Basentana is obtained exclusively from olives sourced from the organic farms of the Lucanian company in Calciano, in Matera.
Collection and Production Methods: the olives, strictly hand-picked from the tree, are transported in perforated crates to the company mill, where they are crushed within 12 hours of harvest. The olives are defoliated and washed, then ground under granite millstones, kneaded in a controlled atmosphere at 24° C, and extracted using a continuous cold method.
The obtained oil is stored in stainless steel tanks, filtered after natural decantation for several days.

With a delicate flavor, intense fruity notes, a slight hint of bitterness, just the right amount of spiciness, and almond hints in the harmonious finish.
Ideal for: fish fried dishes, meat or fish appetizers, white sauces like mayonnaise, delicate salads (lamb's lettuce, lettuce), steamed or boiled fish, sautéed seafood, sour vegetables, seafood salad, pumpkin risotto, Ligurian rabbit, pesto pasta, lemon chicken scallop, and fried zucchini or squash flowers.
Chemical and organoleptic characteristics: the care in the various phases of harvesting and processing gives this extra virgin olive oil a Premium quality.
