The Extra Virgin Olive Oil Il Frantoio BIO from La Basentana is obtained solely from olives sourced from the organic farms of the Lucanian company in Calciano, in Matera.
Variety: Frantoio, Leccino, Majatica.
Collection and Production Methods: the olives, strictly handpicked from the tree, are delivered in perforated crates to the company mill, where they are crushed within 4 hours of harvesting.
The olives are de-leafed and washed, then crushed under granite millstones, ground in a controlled atmosphere at 24° C, and extracted using a continuous cold method.
The resulting oil is stored in stainless steel tanks, filtered after a natural decantation of several days.
