The Pecorino Bagnolese scamosciato from Milk Coop is intended for those who love strong and intense flavors. There are two main ingredients used: the milk from the Pecora Bagnolese and chili pepper. Both products have a unique origin: Irpinia.
Let's start with the milk. The milk used to make the chili pecorino cheese comes from the Pecora Bagnolese, also known as Malvizza. The genuineness of the product is precisely linked to these sheep! Why? The Malvizza sheep are left to roam freely and feed on what nature offers them along the paths of the Irpinian pastures.
And the chili pepper? It also comes from Irpinian cultivation. In fact, Milk Coop's fundamental priority is Km 0. In the truest sense of the word!
The chili pecorino cheese is aged for about 3 months. It has a soft texture and a slight eyeing.
Ingredients: 100% sheep milk, 3% salt, 2% rennet, chili pepper.
