Tajarin are the typical pasta from Piedmont par excellence. "Tajarin" in dialect means "tagliolino" precisely because they are very thin, and grandmothers even used to cut them with a knife into very fine strips.
They are produced by Pasta d'Alba using strictly certified organic and high-quality ingredients: the eggs come from free-range hens and are added to the flour, gently kneading before starting the formation of the nest, which is strictly done by hand.
