The Caciocavallo scamosciato from Milk Coop is produced with milk from cows grazing in the Irpinia and Samnium pastures and from the skilled hands of Master Cheesemaker Pasquale Nigro. It is one of the best Caciocavallo cheeses from Irpinia made using purely artisanal techniques.
Milk Coop's love for animals is reflected in the quality of the product: the cows are indeed left to roam free, feeding on what nature offers them.
Made by creating the curd, the Caciocavallo scamosciato is left to mature for a period of 3 to 6 months. Since no artificial preservatives are used in the process, the maturation takes place in ventilated chambers with controlled temperature and humidity.
Ingredients: 100% Campanian cow's milk, 3% salt, 2% rennet.

Caciocavallo scamosciato can also be used to prepare baked recipes as well as the famous caciocavallo impiccato. In fact, a typical way to eat it is cooked hanging over the embers, allowing it to melt slowly, layer by layer, and be spread on slices of toasted bread.
