The Agrodolce Barricata giardiniera is a classic of Italian culinary tradition. A tasty preparation of vegetables cooked in vinegar and preserved in oil. The uniqueness of this giardiniera is the strong and vinegar-like flavor, but not pungent, given by Lugana vinegar, aged in barrique and made milder through preservation in oil.
 

The quality of the preservation oil is essential for a good giardiniera

The preservation oil is a mix of high oleic sunflower seed oil and extra virgin olive oil from Lake Garda, which keeps the fragrance of the vegetables longer.

This giardiniera is made up of 9 different types of vegetables, specially selected for us by the Brescia agricultural company Agriter from Offlaga and processed in our kitchens on the same day.
