The Tomello we present here in a 300g format is a unique product in its category. Created by the skilled hands of the cheese masters at Fattoria Giambrone, it is a soft cheese with a uniform and compact texture, enclosed in a thin, slightly bloomy edible rind. The milk used to produce Tomello comes from cows and is processed a few hours after milking, when it is still fresh and raw. This is a milk that we could define as km 0, as the cows it comes from are part of the farms that the family has been dedicated to and respected for many years.
The soft Tomello is the result of careful study of artisanal techniques for processing raw milk cheese and its aging. Finally, after trials and refinements, it is ready to reach your table and, we are sure, soon become a protagonist.
With a peculiar and unique scent, Tomello has a sweet and slightly aromatic flavor. Characterized by a very slight acidic note, it sometimes presents a subtly bitter aftertaste, making it the ideal companion for crostini, risottos, first courses like paccheri, mushroom crepes, or creamy walnut and speck lasagnas.
But it is definitely the fondue that allows Tomello to express all its sweetness and fluffiness. It pairs well with sweet and sparkling wines or a good sparkling wine.
Tomello has a seasonality that runs from October to June.
