An EVO oil from Tuscany “classic” that comes from the varieties frantoio, leccino, moraiolo, and correggiolo. A nearly historic oil that originates from plants over 100 years old, which have survived the frost intact and then were re-cultivated, along with extending with more cold-resistant varieties.
The EVO oil produced at the Farm was already well-known many years ago as far as Siena for its quality. Today this "story" has been taken up by the new generations, bringing modern principles that further strengthen the characteristics, with a focus on sustainability.
The harvesting is done manually, in a few days, once the best moment is defined. The olives are taken to the mill within 24-48 hours of harvesting, where they are immediately crushed, mechanically at controlled temperature. After various tests, it was decided to always filter the oil, in order to improve preservation and enhance the concentration of aromas and flavors.
We are in the land that smells of Chianti, at the southern edge of the Municipality of Castellina, at the border between Siena and Florence, on the stretch that goes from the fortified village of Monteriggioni up to Lornano and then continues towards Topina and Quercegrossa. It preferably pairs with raw dishes like a vegetable crudité, appetizers, and of course with raw meat from the grill, polenta, and all the dishes of Tuscan cuisine.
A couple of notes for vegetable soups and especially for bruschetta: imagine Tuscan bread, warmed up, lightly rubbed with garlic, and then, an abundance of Tuscan IGP EVO oil - and if it’s summer - diced cherry tomatoes, basil, salt, and pepper.
The tradition, the type of territory, and the cultivars used allow us to obtain an EVO oil that is light green in color with golden reflections, medium intensity bitter taste with spicy notes, fruity aromas, and hints of artichoke, leeks, chives, and thistle.
The designer packaging is useful for blocking light for better preservation.
Antonio had warned me with a WhatsApp message when the sampling "Beware, it may be addictive" arrived, and it's true!
Like many artisan producers, the tradition combined with the (also cultural) different approach of new generations allows us to reach the right product to bring a bit of Tuscany to the plate!
