Superior category olive oil obtained directly from olives and solely through mechanical processes.
A classic Tuscan EVO oil that comes from the varieties frantoio, leccino, moraiolo, correggiolo. An almost historic oil that originates from trees that are over 100 years old, preserved intact through frost and then re-cultivated, as well as expanded with varieties more resistant to cold.
The EVO oil produced at the Fattoria was already known many years ago as far as Siena for its quality. Today this "story" has been taken up by the new generations, bringing modern principles that further strengthen the characteristics, with an eye on sustainability.
The harvest is carried out manually, within a few days, once the best moment is defined. The olives are taken to the mill within 24-48 hours after harvesting, where they are immediately milled, mechanically at a controlled temperature. After various tests, it has been decided to always filter the oil, to improve preservation and increase the concentration of aromas and flavors.
We are in Tuscany, in the Chianti area, at the southern limit of the municipality of Castellina, on the border between Siena and Florence, on the stretch that goes from the fortified village of Monteriggioni up to Lornano and then continues towards Topina and Quercegrossa. It ideally pairs with raw dishes such as vegetable crudités, appetizers, and of course, raw on grilled meat, on polenta, and on all dishes of Tuscan cuisine.
A couple of notes specifically for vegetable soups and especially for bruschetta: imagine Tuscan bread, warmed, lightly rubbed with garlic, and then drizzled with plenty of Tuscan DOP EVO oil - if it's summer - chopped cherry tomatoes, basil, salt, and pepper.
Tradition, the type of territory, and the cultivars used lead to an EVO oil that is light green in color with golden reflections, medium intensity bitter flavor with spicy notes, fruity aromas, and hints of artichoke, leeks, chives, and cardoon.
