This type of tuna, highly prized and therefore the subject of intensive fishing, is almost extinct. For this reason, only a few artisanal companies have the ability to fish it and sell it, among them there is Fratelli Pinna.

Still using traditional fishing methods, such as hooks and longlines, the tuna is caught in the south of Sardinia and then carefully cleaned.

Once  boiled with a pinch of sea salt to enhance its flavor, it is dried and then preserved in extra virgin olive oil “Denocciolato di Bosana” by Fratelli Pinna.
