This pasta filata cheese, D.O.P. certified, is produced with buffalo milk sourced directly from the Jemma farm. The milk is enriched with natural whey starter and rennet, and then undergoes the coagulation phase. The aging occurs through natural lactic fermentation.
After the maturation is complete, the curd is pulled and shaped by hand. Subsequently, the cheese is cooled in cold water to firm up and then salted in a brine "salsetta". The final product is packaged with its brine to maintain freshness and organoleptic characteristics.

This product has a distinctive braided shape. Its pasta is a pearly white. The flavor is salty and typical, with wild undertones. The texture is elastic and layered. On the outside, the surface is firmer and shiny.
