This DOP pasta filata cheese is made from buffalo milk sourced directly from the farm. The milk is enriched with natural whey starter and rennet, then it goes through the coagulation phase. Maturation occurs through natural lactic fermentation. After maturation, the curd is stretched and shaped manually. Subsequently, the product is briefly cooled in cold water to firm up, and then salted in brine. The cheese is sold in packages containing brine to preserve its freshness.
