The Paški Sir DOP is a hard cheese made from whole milk of sheep from the indigenous breed of the island of Pag in Croatia.
This cheese is aged for a minimum of 60 days; it has a cylindrical shape, with a flat base and a top surface that can be flat or slightly convex, and its dimensions vary: the diameter is between 18 and 24 cm, the height between 7 and 13 cm, and the weight between 1.8 and 3.5 kg.

The cheese rind is smooth and hard, with colors ranging from golden yellow to pale reddish-brown.
