Color: pale straw yellow
Aroma: fragrant, characteristic with its typical traits such as notes of peach, citrus, and Mediterranean scrub. Fine and elegant.
Taste: consistent with the aromas, of balanced freshness and savoriness.
Grapes: 100% Vermentino
Winemaking: once harvested and selected, the grapes are placed in a special fridge at a temperature of 4°C. After that, they are destemmed and placed in an inert press (devoid of oxygen) where they undergo 2 to 6 hours of cryomaceration. At this point, pressing begins. The resulting liquid (about 50-60%) is collected in a steel tank and brought to 5°C for static clarification for 12-24 hours. Once clarified, the must is brought back to a temperature between 12-14°C and selected yeasts are inoculated. At ¾ of the alcoholic fermentation, the wine undergoes racking and finally, the F.A. takes about 20/30 days.
Aging and refinement: 3-6 months in steel tanks and several months in bottles
For appetizers, first courses with fish or vegetables, boiled fish with delicate sauces, small fried fish, white meat, cold cuts, and not overly flavorful cheeses
